Being on a "diet" shouldn't be boring. Infact I encourage my clients to make sure all their meals are enjoyable, colourful and in most cases easy to make, prepare or buy.

From food prepping, to "fakeaways", to home cooking meal and to healthier restaurant food choices.
The worse type of "diet" you can do is the one you can't stick too. So make sure what you are doing DOESN'T require will power. Will power will only get you so far, until you crack and go back to your old ways.
Instead, work on sustainable changes, which doesn't cut foods out and encourages you to eat more variety. Remember be mindful when eating, sit at a table and enjoy it, instead of infront of a TV, mindlessly eating and snacking.
Stay focused, stay on track, if you slip up don't stress, we all slip up sometimes. However regain control and be patient and consistant. The results will follow!
